No-Bake Red Velvet Snowball Truffles

Delight in these no-bake red velvet snowball truffles, rich and creamy bite-sized treats perfect for any festive occasion or dessert craving.

  • 1 1/2 cups red velvet cake crumbs
  • 4 oz cream cheese, softened
  • 1 cup white chocolate chips, melted
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup shredded coconut, for rolling

Instructions

  1. In a mixing bowl, combine red velvet cake crumbs and powdered sugar.
  2. Add softened cream cheese and vanilla extract, then mix until fully combined and smooth.
  3. Form the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Chill the balls in the refrigerator for about 30 minutes until firm.
  5. Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  6. Dip each chilled ball into the melted white chocolate to coat completely, then roll immediately in shredded coconut.
  7. Place coated truffles back on the parchment-lined sheet and refrigerate for an additional 15 minutes to set.
  8. Serve chilled and store leftovers in an airtight container in the fridge.

Notes

For an extra festive touch, sprinkle each truffle with red or white sanding sugar after rolling in coconut.
