Delight in these creamy, no-bake coconut balls made with luscious cream cheese and shredded coconut for a quick, delicious snack or dessert.

  • 1 cup cream cheese, softened
  • 2 cups shredded unsweetened coconut
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (optional)
  • Extra shredded coconut for rolling

Instructions

  1. In a mixing bowl, combine the softened cream cheese, honey (or maple syrup), and vanilla extract until smooth.
  2. Gradually fold in the shredded coconut and powdered sugar (if using) until well combined.
  3. Scoop small portions of the mixture and roll into 1-inch balls with your hands.
  4. Roll each ball in extra shredded coconut to coat the outside.
  5. Place the coconut balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour until firm.
  6. Serve chilled and store any leftovers in an airtight container in the refrigerator.

Notes

For a chocolate twist, dip the coconut balls in melted dark chocolate before refrigerating.
