Classic no bake cheesecake, smooth creamy texture

This No Bake Classic Woolworth Cheesecake is a smooth, creamy dessert with a buttery biscuit base, perfect for any occasion requiring an effortless yet indulgent treat.

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 300ml thickened cream, whipped
  • 1 tablespoon lemon juice
  • Fresh berries, for garnish (optional)

Instructions

  1. Combine crushed digestive biscuits and melted butter in a bowl and mix well.
  2. Press the biscuit mixture firmly into the base of a 23cm springform pan. Refrigerate for 15 minutes to set.
  3. In a large bowl, beat the cream cheese until smooth.
  4. Add powdered sugar, vanilla extract, and lemon juice to the cream cheese and mix until fully combined.
  5. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  6. Pour the cheesecake filling over the biscuit base and spread evenly.
  7. Refrigerate for at least 4 hours or overnight until firm.
  8. Remove from the springform pan and garnish with fresh berries before serving.

Notes

For an extra tangy flavor, add a teaspoon of grated lemon zest to the cream cheese mixture. Serve chilled for best results.
