Mint Oreo Brownies

Delight in rich, fudgy brownies layered with refreshing mint and crunchy Oreo pieces for a decadent twist on a classic dessert.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 20 Mint Oreos, coarsely chopped
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. Melt the butter in a medium saucepan over medium heat. Remove from heat and stir in sugar until combined.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
  5. Gradually add dry ingredients to the wet mixture, stirring until smooth and combined.
  6. Fold in chopped Mint Oreos and chocolate chips gently.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. Allow brownies to cool completely before cutting into squares and serving.

Notes

For extra minty flavor, drizzle melted mint-flavored chocolate on top or add a thin layer of mint frosting before adding Oreos.
