Minestrone Soup

Minestrone Soup is a hearty and healthy Italian vegetable stew, packed with fresh vegetables, beans, and pasta in a savory tomato broth. Perfect for a comforting meal any time of the year.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 potato, peeled and diced
  • 1 (14 oz) can diced tomatoes
  • 6 cups vegetable broth
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 cup small pasta (such as elbow or ditalini)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add garlic and cook for 1 additional minute until fragrant.
  3. Stir in zucchini, green beans, and potato; cook for 3 minutes.
  4. Add diced tomatoes (with juice), vegetable broth, oregano, and basil. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add cannellini beans and pasta; cook until pasta is tender, about 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley and Parmesan cheese if desired.

Notes

For a richer flavor, add a Parmesan rind while simmering the soup and remove before serving.
