This vibrant Mediterranean Chicken and Orzo is a complete meal packed with flavor. Tender chicken, sun-dried tomatoes, olives, and feta cheese are tossed with perfectly cooked orzo pasta for a satisfying and healthy dish.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add orzo to the skillet and toast for 1 minute, stirring constantly.
  4. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and liquid is absorbed.
  5. Stir in sun-dried tomatoes, olives, feta cheese, parsley, lemon juice, and garlic.
  6. Return chicken to the skillet and heat through.
  7. Serve immediately.

Notes

For added flavor, try grilling the chicken before dicing and adding to the orzo. You can also add a handful of spinach or arugula for extra greens.
