Marry Me Tuscan Chicken is a creamy, flavorful skillet dish featuring tender chicken breasts in a rich sun-dried tomato and spinach sauce, perfect for an elegant yet easy dinner.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add garlic and sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth and scrape any browned bits from the bottom of the pan.
  5. Add heavy cream, sun-dried tomatoes, Italian seasoning, Parmesan cheese, and red pepper flakes. Stir well and simmer for 3-5 minutes until the sauce thickens slightly.
  6. Add fresh spinach to the sauce and cook until wilted.
  7. Return the chicken to the skillet and spoon the sauce over the top. Simmer together for 2 more minutes.
  8. Garnish with fresh basil and serve immediately.

Serve this dish over cooked pasta, mashed potatoes, or with crusty bread to soak up the delicious sauce.
