  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and sun-dried tomatoes and cook for 1 minute more.
  3. Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using).
  4. Return chicken to the pot. Reduce heat to low and simmer for 15-20 minutes, or until chicken is cooked through.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh basil before serving.
