Marinated Olives and Feta Cheese

A flavorful and easy-to-prepare Mediterranean appetizer featuring tangy feta cheese and a mix of marinated olives infused with herbs and spices.

Ingredients

  • 1 cup mixed olives (green, Kalamata, and black)
  • 100g feta cheese, cubed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • Freshly ground black pepper, to taste

Instructions

  1. In a medium bowl, combine olives, feta cheese cubes, and minced garlic.
  2. Add olive oil, lemon juice, dried oregano, and crushed red pepper flakes to the bowl.
  3. Gently toss all ingredients together until well coated.
  4. Cover and refrigerate for at least 2 hours to allow flavors to meld.
  5. Before serving, sprinkle with fresh parsley and add freshly ground black pepper to taste.
  6. Serve chilled or at room temperature as an appetizer or snack.

Notes

For extra flavor, add a few sprigs of fresh thyme or rosemary to the marinade and let it sit overnight.
