This creamy Mac and Cheese Soup takes the classic comfort food to a new level of cozy. Perfect for a chilly day, it’s packed with cheesy flavor and tender macaroni.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and milk, then bring to a simmer.
  3. Add elbow macaroni and cook according to package directions, usually about 8-10 minutes, or until pasta is tender.
  4. Reduce heat to low. Stir in cheddar cheese and Parmesan cheese until melted and smooth.
  5. Season with salt and pepper.
  6. Serve hot, garnished with chopped green onions, if desired.

Notes

For an extra layer of flavor, try adding a pinch of smoked paprika or a dash of hot sauce.
