Loaded Wet Burritos with Spicy Verde Sauce

  • 4 large flour tortillas
  • 1 lb ground beef or shredded chicken
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup spicy verde sauce (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish
  • Sour cream for serving (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onions and garlic; sauté until translucent.
  2. Add ground beef or shredded chicken to the skillet. Cook until browned and cooked through, seasoning with cumin, chili powder, salt, and pepper.
  3. Warm the flour tortillas to make them pliable.
  4. Lay out each tortilla and distribute rice, black beans, cooked meat, and a mix of both cheeses evenly down the center.
  5. Roll up each tortilla tightly into a burrito shape.
  6. Place burritos seam side down in a baking dish.
  7. Pour spicy verde sauce generously over the burritos, then sprinkle remaining cheddar and Monterey Jack cheese on top.
  8. Bake at 375°F (190°C) for 20 minutes or until cheese is melted and bubbly.
  9. Garnish with chopped cilantro and serve with sour cream if desired.

Notes

For extra heat, add sliced jalapeños inside the burrito or sprinkle cayenne pepper into the verde sauce before baking.
