Loaded Potato Soup

This creamy Loaded Potato Soup is packed with tender potatoes, crispy bacon, sharp cheddar, and fresh green onions, making it the perfect comforting meal for chilly days.

  • 6 large potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 3 green onions, sliced
  • Salt and pepper, to taste
  • 2 tablespoons butter

Instructions

  1. In a large pot, cook chopped bacon over medium heat until crispy; remove and set aside.
  2. In the same pot, add butter and sauté diced onion and minced garlic until translucent and fragrant.
  3. Add diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Using a potato masher or immersion blender, mash or blend the soup slightly to your desired consistency, leaving some potato pieces for texture.
  5. Stir in heavy cream, shredded cheddar cheese, and sour cream. Cook until cheese is melted and soup is heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with crispy bacon pieces and sliced green onions.

Notes

For an extra kick, add a pinch of smoked paprika or serve with crusty bread for dipping.
