Loaded Potato Meatloaf

This Loaded Potato Meatloaf combines creamy mashed potatoes, savory ground beef, and melted cheese for a comforting and hearty meal perfect for weeknight dinners.

  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/2 cup bread crumbs
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup ketchup (optional topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, bread crumbs, egg, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, mix mashed potatoes, shredded cheddar cheese, bacon, and green onions.
  4. Press half of the beef mixture into a loaf pan to form the base layer.
  5. Spread the potato mixture evenly over the beef base.
  6. Cover with the remaining beef mixture, sealing the edges.
  7. Optionally, spread ketchup over the top of the meatloaf.
  8. Bake for 60 minutes or until fully cooked.
  9. Let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, serve with a side of steamed vegetables or a fresh green salad.
