  • 2 boneless, skinless chicken breasts
  • 1/2 cup grated Romano cheese
  • 3/4 cup Italian seasoned breadcrumbs
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Flatten chicken breasts to an even thickness using a meat mallet.
  2. In a shallow bowl, mix Romano cheese and breadcrumbs.
  3. Place flour in one bowl, beaten eggs in another.
  4. Season chicken with salt, pepper, and garlic.
  5. Dredge each chicken breast first in flour, then dip in eggs, and coat with the cheese and breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat.
  7. Cook chicken for 4-5 minutes per side until golden and cooked through.
  8. Remove chicken from skillet, squeeze fresh lemon juice over the top, and sprinkle with lemon zest.
  9. Garnish with chopped parsley and serve immediately.
