Lasagna Soup

Lasagna Soup is a hearty and comforting twist on the classic Italian favorite, combining all the rich flavors of lasagna in a warm, easy-to-make soup.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casing removed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups water
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 6 lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon.
  2. Add chopped onion and garlic to the pot; sauté until softened, about 3-4 minutes.
  3. Pour in chicken broth, crushed tomatoes, and water. Stir in dried basil, oregano, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles to the pot. Reduce heat and simmer for 10-12 minutes, or until noodles are tender.
  5. In individual serving bowls, add a dollop of ricotta cheese.
  6. Ladle the hot soup over the ricotta, then sprinkle with shredded mozzarella and grated Parmesan.
  7. Garnish with fresh basil leaves and serve immediately.

Notes

For an extra creamy texture, stir the ricotta directly into the soup before serving or add a splash of heavy cream.
