Jalapeno Corn Nuggets

These spicy and crispy Jalapeno Corn Nuggets are a delightful blend of sweet corn and fresh jalapenos, perfect as a savory snack or appetizer.

  • 1 cup fresh or frozen corn kernels
  • 2 jalapenos, finely chopped (remove seeds for less heat)
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp baking powder
  • 1/4 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1/4 cup milk
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine flour, cornmeal, baking powder, salt, and pepper.
  2. In another bowl, whisk together eggs and milk.
  3. Add the wet ingredients to the dry ingredients and stir until combined.
  4. Fold in corn kernels, chopped jalapenos, shredded cheddar cheese, and cilantro.
  5. Heat vegetable oil in a frying pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil, shaping into small nuggets.
  7. Fry the nuggets for 3-4 minutes on each side until golden brown and cooked through.
  8. Remove and drain on paper towels.
  9. Serve warm with your favorite dipping sauce.

Notes

For extra creaminess, try adding a tablespoon of sour cream to the batter or serve with a zesty ranch dip.
