This Italian Sausage and Potato Soup is a hearty and comforting one-pot meal perfect for chilly evenings. Packed with flavorful sausage, tender potatoes, and aromatic herbs, it’s a family favorite that’s easy to make and satisfying to eat.

  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups Yukon Gold potatoes, peeled and cubed
  • 1 cup heavy cream
  • 1/2 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and add the cubed potatoes, dried oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Stir in the heavy cream and parsley. Heat through gently; do not boil.
  5. Serve hot, garnished with grated Parmesan cheese, if desired.

Notes

For a spicier soup, use hot Italian sausage. You can also add a pinch of red pepper flakes. Serve with crusty bread for dipping.
