Italian Love Cake

Italian Love Cake is a luscious, moist almond and ricotta-filled dessert bursting with citrus and spice, perfect for sharing with someone special.

  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  4. In a separate bowl, whisk together all-purpose flour, almond flour, baking powder, baking soda, salt, cinnamon, and cloves.
  5. Gradually add dry ingredients to the butter mixture, mixing until just combined.
  6. In another bowl, combine ricotta cheese, honey, lemon zest, and orange zest.
  7. Pour half of the cake batter into the prepared pan, spread evenly. Spoon the ricotta mixture over the batter, then cover with the remaining cake batter.
  8. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.

Notes

For an extra special touch, serve with a drizzle of honey and a cup of espresso or dessert wine.
