Hot Honey Infused Feta Chicken

  • 2 boneless, skinless chicken breasts
  • 4 oz feta cheese, crumbled
  • 2 tablespoons hot honey
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh thyme or parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Brush the chicken breasts evenly with the spice and olive oil mixture.
  4. Place chicken breasts on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes until the chicken is nearly cooked through.
  6. Remove from oven, drizzle hot honey over each chicken breast.
  7. Sprinkle crumbled feta cheese generously on top of the chicken.
  8. Return to oven and bake for an additional 5 minutes or until the cheese softens and the chicken reaches an internal temperature of 165°F (74°C).
  9. Garnish with fresh thyme or parsley and serve warm.

Notes

For extra heat, drizzle additional hot honey when serving or pair with a fresh cucumber and tomato salad to balance the spicy sweetness.
