  • 2 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1 pound boneless, skinless chicken thighs
  • 1 cup jasmine rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Sesame seeds (optional garnish)

Instructions

  1. Cook the jasmine rice according to package instructions using 2 cups of water.
  2. In a bowl, mix honey, sriracha sauce, soy sauce, and minced garlic to create the sauce.
  3. Heat olive oil in a skillet over medium heat. Season chicken thighs with salt and pepper.
  4. Add chicken to the skillet and cook for 5-6 minutes per side until golden brown and cooked through.
  5. Pour the honey sriracha sauce over the chicken and cook for an additional 2-3 minutes, turning to coat evenly.
  6. Remove chicken from skillet and let rest for a few minutes, then slice.
  7. In the same skillet, sauté bell pepper and shredded carrots for 3-4 minutes until slightly tender.
  8. Assemble the bowls by dividing rice between serving bowls, topping with sliced chicken, sautéed vegetables, and green onions.
  9. Sprinkle with sesame seeds if desired and serve immediately.

Notes

For added crunch and freshness, top the bowls with sliced cucumber or avocado and a squeeze of lime juice.
