  • 1 cup neutral oil (such as vegetable or canola oil)

Instructions

  1. In a bowl, whisk together the egg yolk, Dijon mustard, and vinegar or lemon juice until smooth.
  2. Slowly drizzle the oil into the mixture while whisking continuously to emulsify. Start very slowly to prevent breaking.
  3. Continue adding oil in a thin steady stream, whisking constantly, until all oil is incorporated and the mixture thickens to a creamy texture.
  4. Season with salt and optional black pepper to taste.
  5. Refrigerate for at least 30 minutes before using to allow flavors to meld.
