  • 2 cups cooked white rice
  • 1/3 cup teriyaki sauce
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 cup shredded carrots
  • 1/2 cup sliced bell peppers
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add diced onion, garlic, and ginger, sautéing until fragrant, about 2 minutes.
  2. Add ground turkey to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
  3. Stir in shredded carrots and bell peppers; cook for 3-4 minutes until vegetables are tender-crisp.
  4. Pour teriyaki sauce over the turkey mixture and stir well to coat everything evenly. Cook for an additional 2 minutes until heated through.
  5. Season with salt and pepper to taste.
  6. Divide cooked rice into serving bowls and top with the ground turkey teriyaki mixture.
  7. Garnish with sliced green onions and sesame seeds if desired. Serve immediately.

For extra flavor, try adding steamed broccoli or snap peas on top, or drizzle with a little sriracha for a spicy kick.
