These Ground Beef Salsa Corn Roll Ups combine savory spiced beef with zesty salsa and sweet corn tortillas for a quick and flavorful meal perfect for any occasion.

Ingredients

  • 1 lb ground beef
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 8 small corn tortillas
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped onion
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Optional: chopped cilantro and sour cream for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 3 minutes.
  2. Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 6-8 minutes.
  3. Drain excess grease and stir in chili powder, cumin, salt, and pepper. Mix well.
  4. Stir in the corn kernels and salsa. Cook for another 2-3 minutes until heated through.
  5. Warm the corn tortillas in a dry skillet or microwave until pliable.
  6. Spoon the beef and salsa mixture evenly onto each tortilla, top with shredded cheese, and roll up tightly.
  7. Optional: Place roll ups seam side down in the skillet and cook for 1-2 minutes per side until tortillas are slightly crispy and cheese melts.
  8. Serve warm, garnished with chopped cilantro and sour cream if desired.
