Georgia cracker salad is a refreshing Southern dish combining fresh vegetables, tangy dressing, and crunchy crackers for a delightful, no-cook summer salad.

  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped cucumber
  • 1 (10 oz) package saltine crackers, broken into bite-size pieces
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, whisk together mayonnaise, apple cider vinegar, and sugar until smooth.
  2. Add chopped celery, onion, green bell pepper, and cucumber to the bowl; stir to combine.
  3. Gently fold in broken saltine crackers until evenly coated with the dressing.
  4. Season with salt and black pepper to taste.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld and crackers to soften slightly.

Notes

For a crunchier texture, add the crackers just before serving instead of mixing in early. You can also garnish with fresh parsley or dill for added flavor.
