This creamy and comforting Garlic Cheddar Potato Soup is packed with flavor and easy to make. It’s the perfect cozy meal for a chilly evening.

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 yellow onion, chopped
  • 4 cups Yukon Gold potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • Chopped chives, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and onion and cook until softened, about 5 minutes.
  2. Add potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.
  4. Return the soup to the pot. Stir in milk, heavy cream, salt, and pepper. Heat through, but do not boil.
  5. Remove from heat and stir in cheddar cheese until melted.
  6. Ladle into bowls and garnish with chopped chives.

Notes

For a richer flavor, use sharp cheddar cheese. You can also add bacon bits or sour cream as a garnish.
