Fudgy Raspberry Swirl Brownies with Fresh Berries

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh raspberries
  • 2 tablespoons raspberry jam
  • 1 cup mixed fresh berries (blueberries, raspberries, strawberries) for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line with parchment paper.
  2. Melt the butter in a medium saucepan over low heat. Remove from heat and stir in sugar, eggs, and vanilla extract.
  3. Beat in cocoa, flour, salt, and baking powder until the batter is smooth.
  4. In a small bowl, gently mash the fresh raspberries and mix with the raspberry jam to create the swirl.
  5. Pour half of the brownie batter into the prepared pan. Dollop half of the raspberry mixture over the batter and use a knife to gently swirl it in.
  6. Repeat layering with the remaining batter and raspberry mixture, swirling again to create a marbled effect.
  7. Bake for 25-30 minutes or until a toothpick inserted near the center comes out with a few moist crumbs.
  8. Allow brownies to cool completely in the pan on a wire rack.
  9. Top with mixed fresh berries before serving for added freshness and color.

Notes

For an extra burst of flavor, serve these brownies slightly warm with a scoop of vanilla ice cream or a dollop of whipped cream.
