Delight in these fudgy Grasshopper Cookies, combining rich chocolate with a refreshing mint flavor for a perfect dessert treat.

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup chopped Andes mints or mint chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in peppermint extract.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips and chopped Andes mints if using.
  7. Drop rounded tablespoons of dough onto prepared baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes or until edges are set but centers are still soft.
  9. Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

For extra minty flavor, add a few drops of green food coloring to the dough or sprinkle extra chopped Andes mints on top before baking.
