Frito Cowboy Cabbage is a flavorful and crispy skillet dish combining fresh cabbage with crunchy Fritos and bold southwestern spices for a satisfying side or light meal.

  • 1 medium green cabbage, cored and chopped
  • 1 cup Fritos corn chips, crushed
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Stir in chopped cabbage, cumin, smoked paprika, chili powder, salt, and pepper. Cook, stirring occasionally, until cabbage is tender and slightly browned, about 8-10 minutes.
  4. Remove skillet from heat and fold in crushed Fritos and chopped cilantro.
  5. Squeeze lime juice over the mixture and toss gently to combine.
  6. Serve immediately as a side dish or light main for a crispy, flavorful experience.

Notes

For extra protein, top with grilled chicken or black beans before adding the Fritos for a hearty twist.
