Filipino Chicken Adobo is a savory and tangy stew featuring tender chicken marinated and simmered in a flavorful blend of soy sauce, vinegar, garlic, and spices, perfect for a comforting meal.

Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 6 cloves garlic, crushed
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 1 tbsp brown sugar
  • 2 tbsp cooking oil
  • 1 medium onion, sliced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken, soy sauce, and crushed garlic. Marinate for at least 30 minutes, preferably 1 hour.
  2. Heat oil in a large skillet or pot over medium heat. Sauté onions until translucent.
  3. Add the marinated chicken (reserve marinade) and brown on all sides, about 5 minutes.
  4. Pour in the reserved marinade, vinegar, water, bay leaves, peppercorns, and brown sugar. Do not stir once vinegar is added.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 30–40 minutes until chicken is tender and sauce has slightly thickened.
  6. Season with salt and pepper to taste. Remove bay leaves before serving.
  7. Serve hot with steamed rice.

Notes

For extra depth, marinate the chicken overnight. Adding boiled eggs or potatoes can make the dish heartier.
