Eggnog Gingerbread Thumbprint Cookies

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1/3 cup molasses
  • 1 teaspoon vanilla extract
  • 1/2 cup eggnog
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a large bowl, cream the butter and brown sugar until light and fluffy.
  4. Beat in the egg, molasses, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the eggnog, beginning and ending with the dry ingredients. Mix until just combined.
  6. Roll dough into 1-inch balls and place on prepared baking sheet about 2 inches apart.
  7. Use your thumb or the back of a spoon to create an indentation in the center of each ball.
  8. Bake for 10-12 minutes, until edges are set but centers remain soft.
  9. Remove from oven and immediately press the indentations again to maintain a well-defined thumbprint.
  10. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Optional: dust with powdered sugar before serving.

Notes

For extra flavor, fill the thumbprints with a spiced cream cheese frosting or dollop of eggnog custard for a creamy surprise.
