Taco Casserole

This flavorful Taco Casserole combines seasoned ground beef, melted cheese, and crunchy taco shells for an easy and satisfying Mexican-inspired dinner.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 3 cups crushed tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream (for serving)
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef until browned; drain excess fat.
  3. Add taco seasoning and water to the beef, simmer for 5 minutes until thickened.
  4. In a greased 9×13 inch casserole dish, layer half of the crushed tortilla chips.
  5. Spread half of the seasoned beef over the chips, then layer black beans, corn, and salsa.
  6. Sprinkle half of the shredded cheese and olives on top.
  7. Repeat layers: remaining chips, beef mixture, and cheese.
  8. Bake uncovered for 20 minutes or until cheese is melted and bubbly.
  9. Garnish with green onions and cilantro before serving.
  10. Serve warm with a dollop of sour cream.

Notes

For extra heat, add diced jalapeños or a splash of hot sauce before baking. Serve with a side of guacamole or a fresh green salad for a complete meal.
