chicken noodle soup

A comforting and hearty chicken noodle soup featuring tender chicken, fresh vegetables, and flavorful broth, perfect for a cozy meal any day.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken breast, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened, about 3 minutes.
  2. Add carrots and celery; cook for another 5 minutes until vegetables start to soften.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken and dried thyme; reduce heat and simmer for 10 minutes.
  5. Add egg noodles and cook until tender, about 6-8 minutes.
  6. Season with salt and pepper to taste.
  7. Remove from heat and stir in fresh parsley if using. Serve hot.

Notes

For extra flavor, use homemade chicken broth or add a bay leaf while simmering, removing it before serving.
