  • 2 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup crushed dill pickle chips
  • 3/4 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Place the chicken breasts in a shallow dish and pour the dill pickle juice over them. Marinate for at least 30 minutes in the refrigerator.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. In a shallow bowl, combine the crushed dill pickle chips, Parmesan cheese, and panko breadcrumbs.
  4. In another bowl, beat the eggs.
  5. Remove the chicken from the marinade and pat dry with paper towels. Season both sides with salt and pepper.
  6. Dip each chicken breast into the beaten eggs, then coat thoroughly with the pickle-Parmesan breadcrumb mixture, pressing to adhere.
  7. Heat olive oil in an oven-safe skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes per side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 15-18 minutes or until the chicken is cooked through and juices run clear.
  9. Remove from the oven and let rest for 5 minutes before serving.

For extra tang, serve with a side of homemade dill pickle ranch dressing or fresh lemon wedges.
