Huevos Rancheros

Huevos Rancheros is a classic Mexican breakfast featuring fried eggs served atop crispy tortillas with a fresh, spicy tomato salsa, perfect for a hearty and flavorful start to your day.

Ingredients

  • 2 corn tortillas
  • 2 large eggs
  • 1 cup fresh tomato salsa (chopped tomatoes, onions, jalapeños, cilantro)
  • 1/4 cup refried beans (optional)
  • 1/4 cup shredded cheddar or queso fresco
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste
  • 1/4 avocado, sliced (optional)
  • Fresh cilantro, for garnish
  • 1 lime wedge

Instructions

  1. Heat the vegetable oil in a skillet over medium-high heat. Fry the corn tortillas for about 1-2 minutes per side until crispy. Remove and set aside on paper towels.
  2. In the same skillet, crack the eggs and cook sunny-side up or to your preferred doneness. Season with salt and pepper.
  3. Warm the refried beans in a small saucepan or microwave, if using.
  4. Place each crispy tortilla on a plate. Spread a layer of refried beans over each tortilla, if desired.
  5. Top each tortilla with a fried egg.
  6. Spoon fresh tomato salsa generously over the eggs.
  7. Sprinkle with shredded cheese and garnish with cilantro and avocado slices.
  8. Serve immediately with lime wedges on the side for squeezing over the top.

Notes

For extra flavor, try adding a dash of hot sauce or a sprinkle of smoked paprika. Serve with a side of black beans or Mexican rice for a complete meal.
