  • 4 cups tortilla chips
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup cooked and crumbled breakfast sausage
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 tablespoons chopped green onions
  • 1/4 cup sliced jalapeños (optional)
  • 1/2 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Sour cream for topping
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Scatter tortilla chips evenly on a large baking sheet.
  3. In a bowl, whisk the eggs with salt and pepper, then scramble in a skillet over medium heat until just set.
  4. Evenly distribute the scrambled eggs, breakfast sausage, diced tomatoes, black olives, and jalapeños over the chips.
  5. Sprinkle shredded cheddar and Monterey Jack cheese on top.
  6. Bake in the oven for 8–10 minutes, or until cheese is melted and bubbly.
  7. Remove from oven and garnish with diced avocado, green onions, fresh cilantro, and a dollop of sour cream.
  8. Serve immediately and enjoy your flavorful breakfast nachos!
