Date Brownies

Deliciously chewy and naturally sweetened, these Date Brownies are a wholesome twist on a classic treat, perfect for satisfying your chocolate cravings without refined sugar.

  • 1 cup pitted Medjool dates
  • 1/4 cup hot water
  • 1/3 cup coconut oil, melted
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder, unsweetened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Place the pitted dates in a bowl and pour the hot water over them. Let soak for 10 minutes to soften, then mash into a puree.
  3. In a mixing bowl, whisk together the melted coconut oil and eggs until combined.
  4. Add the date puree and vanilla extract to the wet ingredients and mix well.
  5. In a separate bowl, sift together the almond flour, cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  7. Fold in the chopped walnuts, if using.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs.
  10. Allow brownies to cool completely before slicing and serving.

Notes

For extra richness, serve warm with a scoop of vanilla ice cream or a drizzle of almond butter.
