Crockpot Pierogi Casserole

This hearty Crockpot Pierogi Casserole combines tender pierogis with savory sausage and melted cheese for an easy, comforting slow-cooked meal perfect for busy days.

  • 1 (24 oz) package frozen potato and cheese pierogis
  • 1 lb ground sausage, cooked and drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter, melted
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Lightly grease the crockpot insert with butter or non-stick spray.
  2. Layer half of the frozen pierogis in the bottom of the crockpot.
  3. Spread the cooked sausage evenly over the pierogis.
  4. In a bowl, mix sour cream, cheddar cheese, chopped onion, garlic, salt, and pepper.
  5. Spread half of the sour cream mixture over the sausage layer.
  6. Add the remaining pierogis on top.
  7. Spread the remaining sour cream mixture over the top layer of pierogis.
  8. Pour melted butter evenly over the top layer.
  9. Cover and cook on low for 4-5 hours or until pierogis are tender and casserole is heated through.
  10. Sprinkle shredded mozzarella cheese over the casserole, cover, and cook for an additional 10-15 minutes until cheese is melted.
  11. Garnish with chopped fresh parsley before serving, if desired.

Notes

For extra creaminess, stir in a splash of milk into the sour cream mixture. Serve with a side of steamed vegetables or a fresh green salad.
