Crockpot French Dip Sandwiches

Slow-cooked tender roast beef served on crusty rolls with flavorful au jus for dipping, perfect for an easy and satisfying meal.

Ingredients

  • 3 lb beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 8 hoagie rolls or crusty sandwich buns
  • 8 slices provolone cheese (optional)

Instructions

  1. Place the sliced onion and minced garlic in the bottom of the crockpot.
  2. Season the beef chuck roast generously with salt, pepper, thyme, and rosemary, then place on top of the onions.
  3. Pour beef broth, soy sauce, and Worcestershire sauce over the roast.
  4. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and easily shredded.
  5. Remove the roast from the crockpot and shred it using two forks.
  6. Return the shredded beef to the crockpot to soak up the juices (au jus).
  7. Slice the hoagie rolls, add shredded beef, and top with provolone cheese if desired. Optionally, toast the sandwiches until the cheese melts.
  8. Serve with a small bowl of the au jus for dipping.

Notes

For an extra flavor boost, add a splash of red wine to the au jus before serving or serve with pickled jalapeños for a spicy kick.
