This Crock Pot Crack Potato Soup is creamy, cheesy, and loaded with bacon and ranch flavor. It’s a simple and satisfying comfort food that’s perfect for a chilly day.

Ingredients

  • 6 medium russet potatoes, peeled and cubed
  • 1 (1 ounce) package ranch dressing mix
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) package cream cheese, softened
  • 6 cups chicken broth
  • 1 pound bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: Green onions, for garnish

Instructions

  1. Place the cubed potatoes, ranch dressing mix, cream of chicken soup, cream cheese, and chicken broth into a crock pot.
  2. Season with salt and pepper to taste.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are tender.
  4. Use an immersion blender to partially blend the soup, leaving some chunks of potatoes for texture. Alternatively, you can carefully transfer some of the soup to a regular blender, blend, and return to the crock pot.
  5. Stir in the cooked and crumbled bacon and shredded cheddar cheese until melted and well combined.
  6. Serve hot, garnished with green onions if desired.

Notes

Top with extra cheese, bacon, sour cream, or chives for an even richer experience. For a spicier kick, add a pinch of red pepper flakes.
