Crispy Herb-Infused Roasted Potatoes

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon fresh thyme leaves
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, rosemary, thyme, and minced garlic until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 30-35 minutes, turning halfway through, until golden brown and crispy.
  5. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

For extra crispiness, soak the potatoes in cold water for 30 minutes before roasting and pat dry thoroughly. Serve with a dollop of sour cream or your favorite dipping sauce.
