Creamy Pasta Soup

This Creamy Pasta Soup is a comforting and flavorful one-pot meal, perfect for a cozy night in. It’s loaded with tender pasta, vegetables, and a rich, creamy broth.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more, until fragrant.
  3. Pour in vegetable broth and diced tomatoes. Stir in Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add pasta and cook according to package directions, until tender.
  5. Stir in heavy cream and Parmesan cheese. Heat through, but do not boil.
  6. Serve hot, garnished with fresh parsley and extra Parmesan cheese, if desired.

Notes

For a richer flavor, use chicken broth instead of vegetable broth. You can also add cooked chicken or sausage for extra protein.
