  • 1 baguette, sliced diagonally into 1/2-inch pieces
  • 3 tbsp olive oil, for brushing
  • 8 oz smoked salmon, thinly sliced
  • 1 cup ricotta cheese
  • 2 tbsp cream cheese, softened
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp capers, drained
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, finely chopped
  • Fresh arugula or baby spinach, for garnish
  • Salt and freshly ground black pepper, to taste
  • Optional: pomegranate seeds for decoration

Instructions

  1. Preheat the oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush both sides lightly with olive oil, and toast for 8-10 minutes until golden and crisp.
  2. In a bowl, mix ricotta, cream cheese, lemon juice, lemon zest, chopped dill, and chives. Season with salt and pepper to taste.
  3. Spread a generous layer of the cheese mixture over each toasted baguette slice.
  4. Top each slice with a folded piece of smoked salmon.
  5. Garnish with capers, a small handful of arugula or baby spinach, and a sprinkle of additional chopped dill.
  6. Arrange the bruschettas in a circular wreath shape on a large serving platter.
  7. Optionally, sprinkle pomegranate seeds around the wreath for a festive red sparkle.
  8. Serve immediately and enjoy this elegant holiday appetizer.

Notes

For an extra burst of flavor, drizzle a little high-quality extra virgin olive oil or a squeeze of fresh lemon juice over the finished wreath just before serving.
