  • 1 lb breakfast sausage
  • 6 large eggs
  • 2 cups whole milk
  • 4 cups cubed day-old bread (French or sourdough)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp ground nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain excess fat.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and nutmeg.
  4. Layer the cubed bread evenly in the baking dish. Sprinkle cooked sausage, green onions, parsley, and cheeses over the bread.
  5. Pour the egg mixture evenly over the layered ingredients, pressing down gently to soak the bread.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until the top is golden and the casserole is set.
  7. Let cool for 5 minutes before serving. Garnish with extra parsley if desired.

Notes

For a vegetarian version, substitute sausage with sautéed mushrooms and bell peppers, and add extra cheese or tofu crumbles.
