  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Using a tablespoon, scoop dough and roll into balls, then coat each ball thoroughly in powdered sugar.
  7. Place the coated dough balls 2 inches apart on the prepared baking sheet.
  8. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra burst of mint flavor, gently press a small mint chocolate chip into the center of each dough ball before rolling in powdered sugar.
