Chicken Parmesan Soup

Delicious Bowl of Chicken Parmesan Soup

Enjoy all the classic flavors of chicken parmesan in a comforting soup! This easy recipe features tender chicken, a rich tomato broth, and plenty of parmesan cheese.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 cup cooked small pasta (such as ditalini or orzo)
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup chopped fresh basil, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic, oregano, basil, and red pepper flakes (if using) and cook for 1 minute more.
  3. Stir in crushed tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Return chicken to the pot. Stir in cooked pasta and Parmesan cheese. Season with salt and pepper to taste.
  5. Simmer for 5 minutes more, or until chicken is heated through and cheese is melted.
  6. Garnish with fresh basil and extra Parmesan cheese before serving.

Notes

For a richer flavor, use homemade chicken broth. You can also add a dollop of ricotta cheese to each bowl before serving.
