Chicken Orzo Skillet

This Chicken Orzo Skillet is a hearty and flavorful one-pan meal combining tender chicken, tender orzo pasta, and a medley of vegetables for a quick and delicious dinner.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and season with salt, pepper, paprika, and oregano. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add diced onion and sauté until soft, about 3 minutes.
  4. Add minced garlic and cook for an additional 1 minute until fragrant.
  5. Stir in the orzo pasta and toast it lightly for 1-2 minutes.
  6. Pour in the chicken broth and diced tomatoes. Bring to a simmer and cook until the orzo is tender and most of the liquid is absorbed, about 10-12 minutes.
  7. Return the cooked chicken to the skillet and stir in the chopped spinach. Cook until the spinach wilts, about 2 minutes.
  8. Remove from heat and stir in the grated Parmesan cheese until melted and combined.
  9. Garnish with fresh parsley and serve warm.

Notes

For a creamier texture, stir in a splash of heavy cream or a dollop of Greek yogurt before serving.
