Chicken Ginger Rice

Chicken Ginger Rice is a comforting and flavorful one-pot meal combining tender chicken, aromatic ginger, and perfectly cooked rice for a wholesome dish.

  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 1/2 cups chicken broth
  • 2 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Rinse the jasmine rice under cold water until water runs clear. Drain and set aside.
  2. Heat vegetable oil in a large skillet over medium heat. Add minced garlic and ginger; sauté for 1-2 minutes until fragrant.
  3. Add the chicken pieces to the skillet, season with salt and pepper, and cook until lightly browned, about 5-7 minutes.
  4. Stir in the rice and cook for another 2 minutes, allowing the rice to toast slightly.
  5. Pour in the chicken broth and soy sauce. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked and liquid absorbed.
  6. Remove from heat and drizzle with sesame oil. Fluff the rice gently with a fork.
  7. Garnish with sliced green onions and serve hot.

Notes

For extra flavor, add a handful of steamed vegetables like bok choy or snap peas before serving.
