This Chicken Cordon Bleu Soup captures all the classic flavors of the beloved dish in a comforting and easy-to-make soup. Creamy, cheesy, and packed with chicken and ham, it’s a weeknight dinner winner!

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces cooked chicken, diced
  • 4 ounces cooked ham, diced
  • 1 cup shredded Swiss cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and bring to a simmer.
  3. Stir in heavy cream, diced chicken, diced ham, Swiss cheese, salt, pepper, and nutmeg.
  4. Cook until cheese is melted and soup is heated through, about 5-10 minutes, stirring occasionally.
  5. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use Gruyere cheese instead of Swiss. You can also add a splash of dry sherry to the soup for extra depth.
