This Chicken and Spinach Casserole is a comforting and hearty baked dish combining tender chicken, fresh spinach, and creamy sauce, perfect for an easy weeknight dinner.

  • 2 cups cooked chicken, shredded
  • 3 cups fresh spinach, chopped
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup cooked white rice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine shredded chicken, chopped spinach, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, cooked rice, chopped onion, and minced garlic.
  3. Season the mixture with salt, black pepper, dried thyme, and red pepper flakes if using; mix until well combined.
  4. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  5. Bake uncovered for 25-30 minutes, or until the casserole is bubbly and the top is lightly golden.
  6. Remove from oven and let it sit for 5 minutes before serving.

Notes

For extra crunch, sprinkle breadcrumbs on top before baking, or try adding a handful of chopped mushrooms for additional flavor.
