Comforting Bowl of Chicken and Dumplings

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 2 cups cooked chicken, shredded
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth, thyme, rosemary, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Stir in shredded chicken.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Add milk and melted butter and stir until just combined. Do not overmix.
  5. Drop spoonfuls of dough into the simmering broth. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
  6. Garnish with fresh parsley and serve hot.

Notes

For richer flavor, use homemade chicken broth. Serve with a side of crusty bread for dipping.
